Alright! I was in NYC this past weekend. I don’t think this is a surprise to anyone! Here are some pictures from my trip with my parents and Stacey. Too many things to really write about, I hope the pictures will do for now. I’ll blog again later once I get pictures from Stacey, she took most of them with her camera. Highlights of the trip: Jamba Juice, Yankees game, the heat, the concrete, seeing Wicked on Broadway, seeing rats in the subway, spending the weekend with my family. Enjoy!

Getting this in quickly, as I settle in to watch the All Star game. Just saying…on Friday evening, I’ll be sitting in Yankee Stadium with my dad. Awesome.

Good question. I’ll tell you….I only decided to blog about tonight’s dinner because I originally had settled on making some brown rice. That was it. I forgot to thaw any chicken, and my options seemed lacking at first. Then…I remembered I had salmon in the freezer (yes), and I had fresh green beans in the refrigerator (yes) and I could still make that brown rice I originally planned! (Yes yes yes!)
So, for dinner tonight I had a salmon fillet with herb sauce, High Liner Captains Classics; and green beans and brown rice, with toasted almonds and butter sauce. The time needed = Prep time was 3 minutes, and cook time was 10 minutes (mostly all microwave time).

Verdict on the meal:
I give the Salmon a B+. Obviously, fresh fish is better. You won’t find me arguing that frozen fish is amazing. However, if you don’t own a grill or hate the smell of cooked fish (especially in a small apartment) then microwaving this frozen salmon fillet is a great option. Especially if you’re just one person or have one guest over - very easy to make these fillets because they are individually vacuum sealed in these little steam packs. Also, I found the sauce delicious. It wasn’t overwhelming, just enough to really flavor the salmon and enough to pour some on my rice as well.
I give the green beans and rice an A, totally biased opinion. The green beans were steamed, the rice all cooked up. I toasted some almond slivers in a skillet with some melted butter - and then poured that ’sauce’ over the beans and a little on the rice. Pretty tasty, loved the crisp of the almonds with the beans.
That averages out to an A- in my book. Delicious. I’ll make it again, perhaps make some improvements or alterations. I recommend the salmon fillets and I recommend almonds. Yum.
